What’s for Supper Sunday – ONLY Whole Wheat Rapid Bake Bread Machine Recipe You Will EVER Need!
I have tried for years to find the ultimate no fail whole wheat rapid bake recipe that I could throw in my bread maker and be assured a great loaf when it the beeper went off. I finally had to combine a number of recipes and come up with my own version. This makes one large (2 1/2 – 3 pound size) loaf of fluffy, light, airy, whole wheat bread. One side note: when I bring home my whole wheat flour, I often will increase the gluten content rather than add the gluten to individual recipes as many do. I will empty the entire bag into storage containers, adding 1 rounded Tablespoon of vital wheat gluten to 1 heaping cup of flour. Mixed well with a wisk and I never have to worry about if my baking will rise properly. You can also do this in a mixing bowl and place your flour back into its original bag if you wish.
What you’ll need:
1 egg
2 Tablespoons butter, at room temperature
1 1/2 cups lukewarm water
3/4 teaspoon salt
4 Tablespoons brown sugar
4 cups whole wheat flour
1 Tablespoon yeast
What you do with the stuff:
1) Place all ingredients into pan of bread maker. Select rapid rise loaf setting (for 2 1/2 pound loaf or more – mine is called Rapid Rise 2 and runs for 1 hr 38 minutes)
2) Press start
Enjoy!

Recipe – Oregano, Parsley, Parmesan Crescent Rolls
I was going to make the Rosemary Crescent Rolls from Artisan Bread in 5 minutes a day’s website, but didn’t have enough fresh rosemary in my herb planter. So this is my take!
I am supposed to be able to make this with the following ingredients alone:
herbs, dough, oil & salt
I followed the directions exactly, except I hate cleanup! So I patted the dough to 1/4″ thick, rather than roll it out. And I LOVE BUTTER, so I buttered my cookie sheets rather than oil them. The prep work all in all took less than 10 minutes including cleanup.
I then let them rest for the entire 1 hour as I’m using whole wheat flour which tends to be a little denser. Then they were ready for the oven!
25 minutes later and it was taste test time!
I found that the 25 minutes was a little long for these little crescents, but tasted yummy nonetheless! And so easy too! Don’t take my word for it, whip up a batch yourself!

How’d the bread turn out?
Okay, so now that I’m back on the ball, bet you’ve been waiting on the edge of your seat to see how the Artisan Bread in 5 Minutes a Day turned out for me on Friday! But you’ll have to wait a few minutes longer as there’s some more info to note first.
As previously mentioned, hubby took poppet and me out for a date Thursday night to the food court at the mall, and then on to Chapters and to have a latte at Starbucks. It was wonderful! Poppy really enjoyed getting to eat the whipped cream off the top of Papa’s latte! (one side note, I was THRILLED at the excellent customer service we received there! SUPERB!) Hubby also bought me the cutest little cup, which has become my new favourite post-baby diet tool!
Isn’t it cute?!
I broke it in with a perfect Raspberry & Hazelnut Latte!
The bread by the way turned out PERFECT! I used all whole wheat, and still was awesome. I made it late Friday, and finished the loaf off this morning. The crust was perfectly crisp, and the inside never dried out! Amazing! Was still great as toast at breakfast.
I’ll post again as I try more of the recipes in the book!

Frenzied Friday – Whole Day in 1 Post
Think this will be a tradition. Fridays tend to be the busiest time for me, so I like the idea of a one off post! Hmmm, gives me another idea. Many bloggers do Wordless Wednesday. Think I’ll do Silent Saturday!
So went to my fave Mummy group this morning. Love every time I get the opportunity to join the Guelph La Leche League Group. Will have to do a posting just on them soon. Then it was off to the airport with my hubby. Then groceries, then home to clean and try a couple of recipes.
No sooner did I arrive home and get the baby to nap, I was unpacking the car and out fell one of the glass jars I had bought to make my bread dough. No matter. The dough is stuffed into the remaining container and rising on the counter. Won’t have time to post the finished result tonight, but will make sure to on Sunday! To whet your appetite though, it only took a few minutes of mixing and this is the results so far:
Made myself a latte to celebrate, Poppy is awake, and I’m back off to the races! Have a great next 24 hrs!
