Anyone who knows me, also knows that I am an avid baker. When it comes to cooking, I prefer to rely on a recipe rather than winging it though. This tilapia though, was something I threw together from a bunch of things in the pantry, and I must admit, it is a definite keeper!
What You Need:
4 Tilapia Fillets
4 teaspoons capers with their juice
4 teaspoons sliced kalamata olives
2 red or orange sweet peppers, sliced
2 teaspoons thyme
drizzle of olive oil
juice of 1 lemon
What You Do With the Stuff:
- Place tilapia in a baking dish.
- Top with remaining ingredients.
- Bake at 350 degrees Fahrenheit for 15 minutes, or until fish flakes easily with a fork.
