We were recently at the cottage and my niece’s daycare provider came up with her family for some R & R. This Latin American clan offered to cook us lunch on of the days they were there. Turns out, lunch consisted of enough to keep us full for the rest of the day! And so Yummy too! On the menu: Chicken Quesadilla and Fresh Pico de Gallo. I’ll post the Quesadilla next week since it is served with the Pico, but the Pico can be eaten all on its own!
What You Need:
7 tomatoes
1/2 cucumber
1 green pepper
1/2 bunch of cilantro
1/2 onion
4 lemons, juiced
salt to taste
jalepeno if desired
What You Do With the Stuff:
- Finely dice the tomatoes, cucumber, peppers, cilantro and onion.
- Just before serving, juice the lemons and pour over.
- Season with salt to taste.
